Cletus is extremely impressive in how he can jump into just about any race vehicle and do a fantastic job with so little practice time. Wow!
Whenever I've had a carbureted engine behave like that, it has pretty much always been low fuel pressure/fuel flow. Basically you get a temporary surge of power when you hit the throttle but if you're demanding more fuel than the fuel system can provide, shortly after the surge it runs lean and loses power (often it is just a dirty fuel filter).
I assume they checked that the fuel pressure isn't dropping under load so it probably is something else.
