Right off the bat, you can see the difference in the shape of the port. The stock Cathedral port can't make the flow #'s necessary to run low 8's high 7's you are looking for. However, the manifold port will require a little massaging to match up to the larger port size. Since the manifold is already off, you should bolt on one head at a time and make the change. All this matters.

Curious if you opted for new hardware or used old bolts. How'd the old bolts look? Any signs of stress? Chowdered? Any corrosion? Also always wondered how ya lined the heads up w/o slipping the gasket. Pilot studs? Dowel rods? Or just slap em on & crank till click?
Do a canted valve setup . Too much exhaust shrouding with those big valves
