I hate to stick my spoon where it don't belong but I'd have to guess your timing is advanced too far. The fuel ignites before the intake valves are closed, that's usually what causes the 'backfire' out the intake sometimes fighting you on start up and igniting that residual fuel getting the carb to catch fire. When you blip the throttle and it fights you may be another tell tale sign your timing is advanced too far. As far as leaning it out, in the old days we had a saying, lean makes green (ie power and economy), but lean creates the danger of burning valves/pistons and if you remember Brent's (PFI) boost tuning, it's safer to be rich than lean.
Should have just got a junk yard 5.7 out of dodge ram and throw a cam in it and call it a day.
